Our Story - Bonefish Grill was founded by Tim Curci and Chris Parker, and had its first days in St. Petersburg, Florida in January 2000. Fueled by their mutual passion for fish and adventure, Tim Curci and Chris Parker set out to create a unique dining experience. It was a dining experience that was “polished casual” - the pleasure and details of a superb experience with the comfort and price of casual dining.
Today, Tim and Chris’s ritual of receiving, inspecting, and hand-cutting fish daily is still practiced by the Partners at Bonefish Grill. the success of their vision has generated restaurant growth throughout the Southeast and Northeastern coasts, and today Bonefish Grill is expanding throughout the U.S.
